When an event comes off without a hitch around here, the calm, creative spirit behind the scenes is often Abby Jensen, one of the members of our stellar Event Team.
Born and raised in Springfield, Missouri, Abby discovered her love for hospitality early on. “I took a year off of school and worked for Great American Restaurant’s (an east coast restaurant chain/company) where I truly found my passion,” she said.
Abby then pursued a degree in Culinary Arts and Culinary Management from New York’s Institute of Culinary Education. She continued working in hospitality in Virginia Beach while her fiancée, Klayton, completed his time in the Navy. They headed to Fort Collins in 2021, where he enrolled at CSU and Abby joined the team here!
The couple married in 2023 and settled in Old Town with their pups, Moose the Plott Hound and Rosie the little terrier, along with six backyard chickens. “I love Fort Collins, it’s the same size as Springfield, but way cooler,” Abby said. “We love paddleboarding on Horsetooth, walking to City Park with the dogs and hiking local trails.”
As for Ginger and Baker, “I really like the aesthetic and culture here, it’s so friendly and warm,” she said. “And the dedication to sourcing local and sustainability is so important, especially for a big operation.”
What does she like best about event coordination? “My favorite are weddings! It’s an honor to be trusted and get to participate with such a special event for people,” Abby said. “Recently planning my own wedding means I have a unique and personal perspective on the whole process, and I understand the importance of a great team of professionals!”
Her favorite pie? “I like apple pie; you just can’t go wrong with a classic done well. Also, my husband and I like to do Pie Day Friday, so we treat ourselves with a slice from G&B. Our all-time favorites are Passion Fruit Meringue and Quadruple Coconut Cream. Banana Cream is a STRONG 3rd place.”
