Bakery Production Manager

A precise understanding of how pastry and bread doughs perform and a keen eye for delicious and beautiful desserts are just two of the skills Shayna brings to our talented baking team.

“I’m also excited to be part of production that has so much pie dough, we’re working on getting our flakiest most buttery crust possible!”

“It’s great having young bakers on the team,” Shayna said. “They’re working hard to build their experience and G&B is a great place to learn – we make everything from scratch with a high expectation of quality.”

A Colorado native, Shayna was born in Steamboat Springs and grew up in Fort Collins.  After graduating from Fort Collins High School, she moved to Santa Barbara to build her pastry experience.

“I’ve baked my whole life, my mom was a homemaker and baker, and I found my passion as the youngest child in the family baking by her side,” Shayna said.

“I joined a professional baking kitchen at age 18 here in Fort Collins, then in Santa Barbara, I trained for four years at Renaud’s Patisserie and Bistro specializing in croissants. Following that, I trained at a Scandinavian bakery, enriching my sourdough experience and continuing my work with laminated dough.”

Shayna then made the move back to Fort Collins to spend time with family, where she trained in sausage-making at a butcher shop before joining the G&B team in July of 2025.

When not working, Shayna enjoys gardening and tending to her many houseplants and she’s also interested in holistic health.

Her favorite pie? “Chocolate silk pie with a white cream topping.”
