Managing our popular Café is no easy feat, but Matt Mero’s love of hospitality, polished style and great sense of humor are more than enough to make everyone feel welcome.

Matt honed his skills managing both corporate chains and high end bistros. “I’ve developed my management style as I’ve gone along,” Matt said. “The best way to run a restaurant is to have the attitude ‘I’m here to help.’ Whether it’s guests or staff, everyone respects and appreciates that.”

Originally from Fairfax, Virginia, Matt made the move to Los Angeles and worked as a standup comedian for several years, then moved into acting. “But I found that I would much rather spend the day in a restaurant than on set, it’s more engaging and better than standing around while they set up cameras and lights,” Matt said. “Managing a restaurant is a great way to spend the day, I get to be around good food and good people.”

Matt made the move to Colorado when his partner, Sarah who’s a veterinarian, started a faculty position at CSU. “I came to Ginger and Baker for a few meals before I took the position, and I could tell G&B has a good eye for aesthetics and a solid set of tastebuds.” Matt said. “Moving around different restaurants for several years, I’ve realized I can’t manage a place if I don’t wholeheartedly believe in the food.”

When not working Matt likes to hang out with Sarah and their cats and dog, work on his car, play guitar and do a little karaoke.

His favorite pie? “Apple, cherry and pecan are my top three, but if I could only have one and eat it every single day,  it would be warm apple pie with a scoop of vanilla, please.
