Drew’s a man of many hats here at G&B, starting with managing ordering and inventory with an eye towards local sourcing. He also coordinates with Ginger on best ways to utilize all the produce from the G&B Farm, incorporating the bounty of fruits and veggies into menu items and specials. But we’re just getting started, you can also find Drew pitching in with cooking for Events, jumping on the line in the Café, running expo in The Cache or anything else that keeps things moving forward.

“Every day is an adventure here,” Drew said. “I do things I know I have to get done, but then I can plug myself in and help any way that I can. We have a lot of really great people and talented chefs and together we brainstorm menu ideas and find solutions for anything that may come up over the course of the day.”

Drew hails from Greeley and took a classic route in his culinary education, starting as a dishwasher at 16, then moving up ladder. He began truly honing his skills when an old friend brought him on at the Greeley Country Club. “It’s where I began building sauces, mastering techniques and creating dishes.”

Drew continued to cement his culinary style working as a chef in area restaurants and country clubs. “I’d say my cooking is French technique infused with American style. I like to cook just about everything, pasta, steak, chicken and love rendering down pan jus to make a great sauce.”

Then, with young two kids at home, Drew pivoted to working as an insurance rep for several years. “It was a tough transition moving from working the line to sitting at a desk, that’s for sure,” Drew said. “I got to spend time with the kids, though. My son loved it when we were all at home during covid and I’d cook him duck breast for lunch.”

But the kitchen kept calling so he took a role managing ordering, running the line and training for PF Chang’s, then joined the G&B team in 2023.

When he’s not working, Drew likes to hang out with his son Declan and daughter Briar, watch true crime docs, work out and, of course, cook. “I’m aways playing around with different recipe ideas that pop into my head.”

Hi favorite pie? “Boston Cream Pie. The Bavarian cream is amazing mixed with the dark chocolate. It’s a gut bomb in the best way.”
