Chef, The Café
Soccer player, artist, chef. Born in Mexico City and raised in Loveland, Colorado, Rodrigo Paredes brings a wealth of experience and creativity to the table at the Café.
After graduating from high school, Rodrigo headed to Mexico City with the goal of playing professional soccer. “I tried out for some of the bigger teams, working in restaurants while waiting for opportunities,” he said. “It was fun, but in the end, I headed back to the states.”
George then went to CSU, earning a degree in graphic design and painting. “But I realized I loved the camaraderie, ambiance and high pressure of the kitchen,” Rodrigo said. “I knew I wanted to cook.”
After graduating from culinary school, Rodrigo worked with Chef Troy Guard in Denver, helping open Sugar Mill and Los Chingones. He further honed his skills at Café Vino, was exec chef at Fort Collins Country Club and was on the teams at Tamayo and Zolo Grill.
“I joined Ginger and Baker in 2018,” he said. “I love the community here. Ultimately, it’s about the people and from the owners to the new hires, we have a great group.”
When not working, Rodrigo is a family man. “I have three wonderful young kids with my wife and I love spending time with them, fishing and going to parks,” Rodrigo said. “I’m also an avid cookbook collector.”
His pie of choice? “I’d say strawberry rhubarb is my favorite.“Back To Team
