Maintaining our award-winning wine list and ensuring each guest experience in The Cache is exceptional takes a sure hand, and Robert Schwarz’s years of experience make him the perfect person for the job.

Born in Michigan and raised in New Mexico, Robert studied Hotel and Restaurant Management at the University of Nevada, Las Vegas, and received his Certification in Menu Planning and Wine and Food Pairing from the Culinary Institute of America.

He lived and worked in Southern California for many years, raising a family and working for corporate organizations including California Pizza Kitchen, Kemper Sports and the Landmark Restaurant Group.

When he decided to leave the rat race of Southern California, Colorado was his choice. He directed R&D for Taco John’s in Denver and later made the move to Fort Collins and Ginger and Baker.

“I enjoy the excitement of the business model here,” Robert said. “I’m passionate about our multiple concepts.”

“My favorite part so far is continuing to develop the wine list and working with the team,” Robert continued. “The professionalism of the staff is very noticeable and the attention to detail in all aspects of Ginger and Baker is impressive.”

When not working, Robert enjoys getting outdoors to cycle, ski, golf and garden, and he also enjoys live music.

His favorite pie? “Apple or pecan. Pie is something my mother made and a warm, flaky slice with vanilla ice cream is so perfect.”
