Hospitality, adventure and a great sense of style come naturally to our Market and Coffeeshop Manager, Pascale Caubet Geniaux. Born in the French Pyrenees, Pascale grew up working with her Spanish mother and French father running a four-star, 400-room hotel. After graduating from college, Pascale spent time in Florida and then Bora Bora, French Polynesia, where she trained locals in hospitality for the resort industry. After that, back to the US, first in North Carolina, then New York City and ending up here in Fort Collins. “I Googled ‘best place to raise a family’ and here I am!

“When I read about Ginger and Baker, it sounded perfect,” Pascale said. “A family owned business built in such a beautiful space, rooted in Colorado history with so many components and so much potential.”

Pascale has been with us since we opened, and became market manager last spring. “This year, I’m looking forward to showcasing new house-made products, developing more great relationships with local vendors and stocking products that respect Colorado’s rich agricultural roots,” she said.

As for her favorite pie, Pascale’s French roots again make an appearance. “I am not a pie person, my favorites are the croissants, pain au chocolat and our breads.” But of course!
