Manager, The Cache
Born and raised here in Fort Collins, Marc graduated from Poudre High School and then earned a Bachelors in Beverage Studies from the Culinary Institute of America in Hyde Park, New York.
“Then the mountains called me back home,” Marc said. He continued to hone his beverage and management skills as bar manager at the Moot House, then worked for BreakThru Beverage Group as a rep in Northern Colorado. Most recently, he was Food and Beverage Manager for the Fort Collins Marriott.
Marc’s beverage philosophy: “I like that wine, beer and liquor can be just as complex as food, they can transform in so many ways,” he said. “Plus, food and beverage complement each other so well and pairing them can enhance a meal so much more.”
Here at Ginger and Baker, Marc manages The Cache and oversees the beverage programs throughout the building, “Ginger and Baker is one of the most innovative restaurants in town,” Marc said. “I love the level of creativity and the chance to work with this team.”
“I’m working hand in hand with Chef Matt Pickering here in the The Cache to create menu pairings that will make it the most enjoyable experience possible,” Marc said. “We’re continuing to build on our Wine Spectator Award of Excellence and want Ginger and Baker to become a wine destination, a place people seek out for the expected and the unexpected in food and drink.“
“Our cocktail programs in The Cache, the Café and the Rooftop also continue to be innovative, yet approachable, because we use as many fresh, local ingredients as we can,“ he added. “Every season, there’s something to get excited about.”
When not working, Marc loves being up in the mountains, hiking, camping and backpacking. He also spends a lot of time on his road bike enjoying the bike trails and parks here in town.
His favorite pie? My dad’s favorite is pumpkin, we have it every year on his birthday in June, so I think I’ll have to go with that.”
