Ruth’s Lemon Meringue
From 1924 – 1934 my great-great-grandmother (Isolina Holland) and my great-grandmother (Ruth Holland Cook) owned and operated the Pines Resort in the Big Horn Mountains of Wyoming. Ruth was widowed with four young children and worked to support her family. They catered to a local clientele serving delicious dinners. The menu was fried chicken, baking powder biscuits, cream gravy, buttered peas and lemon meringue pie. The lemon meringue pie recipe has been passed down the generations and is still a family favorite.
