6 egg whites
1 cup + 1½ Tbsp. Sugar
¼ tsp. salt
½ tsp. vanilla extract
colored sugar, for decorating
In the bowl of an electric mixer combine egg whites, sugar, salt and vanilla. Heat mixing bowl over a double boiler, whisking continuously until the mixture reaches 170F on a thermometer.
Move the bowl to your electric mixer and whip on high speed until stiff peaks form.
Pipe peeps using method in video.
Allow to set slightly (10-15 minutes) before moving to coat in sugar. Use an offset spatula to pick up the peeps and toss in bowl of colored sanding sugar. This part may get a little sticky/messy!
Store at room temperature.
